Hello There Again Everyone,
As I wrote this I had to double check the month on it as the weather seems like I should be writing the July newsletter as opposed to the May issue. The weather lately has been just a little better than beautiful, and a little below balmy. As you look around the bay, you can see many docks and boats coming into place, when at this time a year ago there was still ice on many local waters. With the fishing opener one week away, this year should provide for an excellent weekend of angling. Many snowbirds and second homeowners have begun to make the annual pilgrimage north and are greeted not only by these terrific temperatures, but also by the early sound of loons at night and budding trees abound. The water temp has creeped up to 49 degrees and is quickly on the rise leading us to look forward to a great summer recreational season.
Summer Fun Kicks Off!
At Famous Dave's we are set to kick off our 2010 entertainment season with the best live blues every Saturday in May starting at 8 pm. Mother's Day is sure to be a hit with free brunch at Famous Dave's and free golf at Big Fish for moms. On Sunday May 30th Dave himself will be holding a backyard BBQ clinic at the Lake Of The Torches Casino in Lac Du Flambeau. Seating is limited so be sure to kick off your summer grilling season with a bang. You can purchase tickets online here. We are also planning on opening for full time business on Wednesday May 19th with exciting new menu items such as colossal sized beef ribs, beef & shrimp kabobs, a brand new shore lunch perch, and boneless wings. Fell Off The Wagon Apples (Page 99 of Backroads and Sidestreets)
Ingredients:
1/2 cup chopped pecans
1 teaspoon butter
1/4 cup honey
1/4 cup light brown sugar
1/4 cup unsalted butter
1/4 cup orange juice concentrate
2 tablespoons Amaretto
2 tablespoons peach schnapps
1 teaspoon vanilla extract
2 teaspoons fresh lemon juice
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
2 tablespoons cornstarch
1/2 cup water
2 pounds Granny Smith apples peeled and cut into bite size
Preheat the oven to 350 degrees. Mix pecans and butter in shallow baking dish. Toast for 13 minutes, stirring occasionally. Let stand to cool. Mix honey, brown sugar, unsalted butter, and orange juice concentrate in a saucepan. Bring to a simmer over medium heat, stirring frequently. Stir in Amaretto, peach schnapps, vanilla, lemon juice, cinnamon, nutmeg, and salt. Bring just to a boil, stirring frequently. Add a mixture of cornstarch and water. Bring to a boil. Cook until thickened, stirring constantly. Pour over the apples and toasted pecans in a bowl and toss until coated. Serve warm over ice cream.
Yield: 6 to 8 Servings
